Cask Notes
Where tradition and heritage meet experimentation and modernity. An “old-style” spirit in a cask we acquired back in 2010, given an extra layer of complexity through finishing. Matching casks with finishing woods is a continual learning process, from which we will gladly share the results. Appreciable notes of pinot noir complement the characteristically biscuity base.
Tasting Notes - Dried fruit and floral.
Colour: Nectarine gold.
Nose: Fresh iris, blackcurrant jam and apricot toasted oat crumble.
Palate: Charred peach, dried cranberry and rose petal jelly.
Finish: Spiced berry compote with a sprinkling of toasted pine nut.

Click & Collect - Orders can be collected from our shop in Kirkoswald, Monday - Sunday from 10am to 4pm. Your order will usually be ready within 24 - 48hrs but please wait until we confirm your order is ready before visiting.
